Recipe for Three Sisters Cherokee Succotash




Adapted from The Blue Zones American Kitchen: 100 Recipes to Live to 100 by Dan Buettner, pages 46-47.

Preheat the oven to 375 degrees.

2 cups peeled and diced butternut squash
1 tsp. paprika
3 cloves garlic, minced
1 large red onion, finely-diced
1 medium red bell pepper
1 cup green beans, chopped
1 cup corn kernels
1 cup edamame (or lima beans)

Line a baking sheet with parchment paper. Add the diced butternut squash and sprinkle with paprika.

Roast the squash in the oven until soft and caramelized, about 20 minutes.

Water saute the red onion until lightly browned. Add the garlic and saute for another minute.

Add the bell pepper and edamame and cook for 2 minutes. Add the corn and cook for 2 more minutes. Add the green beans and cook for another minute.

Add the roasted squash, toss, and serve.
